I’m finishing 2011 on a high note – with yet another recipe published in Fitness Magazine – check out their November/December issue!  In the past, I’ve developed four recipes for the Dinner in 20 (September 2010 Curried Shrimp with Mango Couscous, November 2010 Chicken Soba Bowl, April 2011 Lemon Thyme Chicken, and May 2011 Beef Stir-Fry with Avocado Salad). 


This current recipe is the first one for me in the new Dinner for Le$$ section.  Fettuccine with Shrimp, Garlic and Broccoli is a nutritious, healthy, and delicious meal for under $3 per person.  What’s not to like?


For the recipe, I drew my inspiration from home cooked meals that are perfect for a cold fall or winter night.  You get the comfort of pasta, the sweetness of homemade tomato sauce (the secret to sweetness is carrots!) and much needed energy from shrimp and broccoli.  Add extra red pepper flakes for spice.  I hope you give this one a try and let me know your thoughts!  Happy cooking.  See you in 2012.

I was a bit worried that I might fall into “3 strikes and you are out” category!  Afterall, I have been lucky to have three of my recipes already published in Fitness Magazine (September 2010 Curried Shrimp with Mango Couscous, November 2010 Chicken Soba Bowl, and April 2011 Lemon Thyme Chicken).  Boy, was I happy to get an email from Fitness asking me to develop another recipe.  


This time, I reached down to my Texas roots and came up with with this recipe for Tex-Mex Beef Stir Fry with Avocado Salad.  Will you give it a try?



I love developing this healthy and delicious recipe that takes 20 minutes to make – no more excuses for not having enough time.  Feed your body, feed your soul – you are worth it!

Welcome Spring!  Salute! to lighter, healthier, and fresher eating.  Why not start with my recipe for Lemon-Thyme Chicken tenders with ribbons of sauteed zucchini, grape tomatoes and a sprinkle of crumbled feta!

I’m so excited to share my 3rd recipe developed for Fitness Magazine with you.  (To one of my biggest fans, you know who you are, please notice that there are no onions or cilantro for once in the recipe!).  I love developing this healthy and delicious recipes that take 20 minutes to make – no more excuses for not having enough time.  Feed your body, feed your soul – you are worth it!

Recipe Testing & Development

My first opportunity to develop recipes sent me to Des Moines, Iowa, where I worked as a Recipe Developer and Editor at Cuisine at home magazine.

For my next assignment, I went to Birmingham, Alabama to the test kitchens of Southern Living Magazine.

While in Birmingham, I worked as a free lance recipe developer for Joy Bauer, developing healthy, easy-to prepare dishes for Slim & Scrumptious Cookbook.

Another continuous recipe editing project has been with a Washington D.C. cookbook author and instructor Robyn Webb.  Check out Robyn’s newest, lucky #13 The Get Healthy, Go Vegan Cookbook.

My latest development has been for the Fitness Magazine.

One of the first questions I was asked when people found out that I am attending the Culinary Institute of America was: Are you going to be a chef? Are you going to own a restaurant?

The answer to both was always a solid “no.”  As much as I love to cook, I am more passionate about being in a test kitchen rather than a restaurant kitchen.  And so I pursued different culinary opportunities in the world of publishing.

My first such opportunity sent me to Des Moines, Iowa, where I worked as a Recipe Developer and Editor at Cuisine at home magazine.
