Watermelon Agua Fresca with Mint and Lime

Here is a refreshing, sugar-free beverage to help you celebrate the last few days of summer. Made with watermelon, mint, and lime juice, this delightful pink drink is perfect on its own, but can be jazzed up with a shot of rum and sparkling water.

Watermelon Agua Fresca with Mint and Lime

Ingredients

1/2 watermelon, peeled and cut into chunks
2-4 cups water
1/2 lime, juiced
1 tablespoon mint leaves

Directions

1. Add all ingredients to a blender or food processor and puree until smooth.

2. Strain through a mesh strainer or cheesecloth and refrigerate until ready to drink.

3. Serve garnished with lime and mint.

Optional: serve over ice with a shot of rum or vodka and finished with sparkling water.

Seattle Seahawks SuperBowl Cocktail

It’s hard to believe that a year has passed since the last SuperBowl. It’s even harder to believe that I watched the last SuperBowl and saw Seattle Seahawks’ win! What will happen this year? Who will win? Who will lose? Who will have a clothing accident during halftime? It’s hard to tell.

What’s easier to predict is your drink of choice during the game. Last year, the allrecipes.com video team gave you Beast Mode Vodka.

This year? We have the 12th Man-Hattan. It’s not for the faint in heart. The drink is strong, and powerful, just like Seahawks are.

It’s not every day that the Allrecipes.com video team searches for Skittles candy at 8:30 am.  We were, however, on a special assignnment to make the Video for the Beast Mode Vodka to celebrate our local football team ~ Seahawks!

Do I admit that I don’t watch football?  Do I admit that to me, “football” still means “soccer”?  Do I admit any of this?  Perhaps, I do not.

Instead I will admit to how fun it was to separate 9 large bags of Skittles Darkside candy into the Seahwaks blue and green colors.

If you are a fan of Seattle Seahawks and want to make this flavored vodka to cheer during the game, do follow the recipe.  If you happen to cheer for a different team, you could use a different color of Skittles to match.

Avocado Blueberry Smoothie with Almond Milk and Flaxseed

Smoothies have been ruling my world lately.  The newest one is the Avocado Blueberry Smoothie with Almond Milk and Flaxseed.  It’s nice to have a dairy-free version of the smoothie and this one can be made with soy or rice milk as well.

In the heat of the summer, do use fresh berries if you can.  Though, frozen berries will make this breakfast especially frosty.  Avocado adds incredible richness and makes this smoothie creamy and decadent.  Ready to give it a whirl?

Avocado Blueberry Smoothie with Almond Milk and Flaxseed

Ingredients

1 large avocado, peeled and seeded
1 1/2 cups blueberries, fresh or frozen
3 cups unsweetened almond milk
2 tablespoons flaxseed

Directions

1.  Combine all ingredients in a blender and blend.  Add more milk, as needed to reach desired consistency.

Banana Peanut Butter Soy Smoothie ~ Breakfast Recipe

There wasn’t much in my lunch bag for breakfast this morning.  A single banana.  One, lonely, banana.  When I came to work, I remembered that I had a jar of crunchy peanut butter at my desk and soy milk in the refrigerator.  Smoothie time!  This Banana Peanut Butter Soy Smoothie was a healthy, satisfying and delicious combination of flavors and quick to make.  I suggest you make it for breakfast tomorrow!

Banana Peanut Butter Soy Smoothie

Ingredients

1 banana, peeled, quartered

2 tablespoons peanut butter

1 cup soy milk

1 cup ice

Directions

1.  Blend all ingredients together until smooth.  Drink up!

Clean Your Body SuperFood Morning Shake Recipe

Oh boy!  For the next eleven days I will be doing a cleansing eating plan – a combination of gluten-free and vegan, no caffeine, no alcohol, no chocolate!  I will have to give in for 2 meals to make exceptions, but for the rest 31 meals plus snacks, I will stick to the plan.

This morning, I started with a Clean Your Body SuperFood Shake: Kale, Almond Milk, Ice.
Hmmm, it’s green!

Clean kale, and tear the leaves into small pieces.  I used about a cup and half of this vitamin-packed green.  Place at the bottom of a blender (how I wish I had a Vitamix for this!).  Add a cup of non-sweetened almond milk, and a cup of ice.  Tightly secure on the lid for the blender and blend.

It’s a combination of a shake and an icee.  I will try adding herbs and spices tomorrow, but for now, I’m off to slurping.

Apricot and Raspberry Flavored Iced Tea ~ Make Your Own at Home

One of my favorite summer beverages is a glass of iced tea (there is an ongoing debate as to whether it is “iced tea” or “ice tea”).  Regardless of what you call it, it’s delicious, cooling, and refreshing.  These days, grocery and specialty stores carry a wide array of flavored iced teas, but did you know that it’s very easy to make at home?

Over the weekend, I was flipping (over exaggerated) crepes for a Sunday breakfast.  I rolled the crepes with sour cream and raspberry and apricot jam.  While cleaning up after breakfast, I noticed that each jar of jam had barely anything left inside.  Rather than discarding the minimal leftovers, I decided to make Apricot and Raspberry Flavored Iced Tea.


Place a bag of your favorite tea into each jar.
Fill with boiling water and allow to cool to room temperature.  
Close each jar with its original lid and refrigerate until cold.
Shake the iced tea inside the jar to release any last bit of the jam and pour the tea over ice.

Summer is here!  Now head out to your kitchen and see if you have any “barely-there” jars of jam.

Frozen Lemonade and Vodka Cocktail with Mint

When I worked at Cuisine at home magazine in Des Moines, Iowa, one of the first recipes I developed was Limoncello Mint Lemonade. The recipe was published in April 2008 on the back page section called Grand Finale.  It was the first time I had tasted Limoncello – a delicious Italian lemon liquor, syrupy and bright with lemon.

When developing the recipe, I immediately thought of my favorite drink, the mojito, and decided to reinvent it with Limoncello as the main ingredient.  After numerous trials and taste tests (can you believe I got to do that at work and get paid for it?) I came up with a refreshing minty cocktail, sweetened with frozen lemonade and fizzed with club soda.

Fast forward three years.  On a cold, dark, rainy Seattle evening, I was on my way to attend a cocktail party.  I wanted to remake the Limoncello Mint Lemonade.  The only problem was that I did not have Limoncello.  Carri, the host of the party, generously offered the use of her vodka and that is how the Frozen Lemonade and Vodka Cocktail with Mint was born.


Frozen Lemonade and Vodka Cocktail with Mint


Ingredients


1 container frozen lemonade (12 ounces)
1 cup mint leaves, tightly packed
Juice of 2 large lemons
1 1/2 cups vodka
Ice Cubes
Lemon-Lime Sparkling Soda (I like Fresca or Squirt)
Mint sprigs for garnish

Directions


1.  Combine lemonade, mint and lemon juice in a large pitcher.  Using a muddler (or a wooden spoon), bruise the mint leaves to release the aroma, and combine with lemonade and lemon juice.  Add vodka to the pitcher and stir to combine.

2.  Add ice to a serving glass and top with the lemonade-vodka mixture.  Add a splash or two of lemon-lime sparkling soda.  Gently stir and garnish with a mint sprig.  Serve immediately.

The pitcher of lemonade-vodka mix can serve anywhere from 10-16 drinks, depending on how thirsty you are.

Take a Chill with Watermelon Lemonade

Enjoy this easy, refreshing, non-alcoholic drink that will take you a few minutes and a blender to put together.

Combine equal amounts of lemonade (home made is best) and watermelon in a blender. Buzz. Pour over ice and garnish with mint.  Drink!  (And here’s a recipe for the Summer Picnic Potato Salad).
