Dinner time! Tonight, I’m cooking for one. Stocking up for the Seattle snowstorm earlier in the day, I picked up ground beef to make a pot of chili. When it came time to make dinner, the ground beef was still sitting wrapped up, in the refrigerator, untouched. There was no time to make chili, yet I still had to eat. Why not make a burger? I call this creation a Sandwich Burger, because instead of a traditional burger bun, I used two slices of whole grain bread. Sliced in half, I ate the burger just like I would a sandwich. A bag of chips would’ve been a nice addition, but I settled for a glass of tomato juice. Enjoy! Make this for yourself, but the recipe multiplies simply enough to make for the whole family.

1 small onion, thinly sliced
1/4 pound ground beef
1 slice Swiss Cheese
2 slices whole grain bread
1 tomato, sliced
2 pickles, sliced
1. Heat oil in a cast iron skillet over medium heat. Add onions, and saute for 10 minutes.
2. Push onions to one side. Form the beef into a patty, avoiding overworking the beef. Cook in the cast iron skillet 3-5 minutes per side. Season with salt and pepper on each side. Top the beef patty with a slice of cheese.
3. While the cheese is melting, toast the bread.
4. Spread each side of the bread with horseradish and mayonnaise. Top one of the slices with tomato, pickles, caramelized onions and beef patty. Place the other slice of bread on top and press gently. Slice the sandwich burger in half.
5. Serve with a napkin.
